cartopy plots draw lines through land areas [closed]

[Comment to administrators: I am not sure why this was closed. I posted the question late in the night (US Central Time) and found it closed within a couple of hours, even before many people would have seen the question. I am puzzled by the rationale here. It is not clear what extra information I am supposed to add. It is clear from the question that I am seeking input from people who faced the exact same error as in the xarray docs, linked to in my question. The idea here is that if somebody figured out how to solve that problem, chances are it will solve mine as well.]

I am trying to plot (using pcolormesh) some field over the entire glob using the PlateCarree projection in Cartopy. The dataset is unfortunately too big (several GB) and I cannot share it easily. The error, however, is very similar to what I am seeing in the xarray docs (!). The third plot on the page has weird lines running across the continents. Perhaps whoever put together the documentation forgot to fix it.

Question: Has anybody encountered the same error as seen in the xarray docs? If yes, how did you solve it?
