Restaurant Delivery: Making "tip adjsutment" to an authorized transaction

I have a pizza place were we get prepaid online delivery orders. Many customers tend to tip after receiving the order. They write down the amount on the bottom of the receipt above the signature. Is there any way to make adjustments to an already authorized payment for tips since my drivers rely on tips heavily. The current system I am using is stripe but I am willing to see if it is possible on stripe or autorize.net.
